Herbaceous Peach Gin & Tonic

Makes 1 cocktail

4-5 tonic water ice cubes
2 oz. Locally Preserved Peach Syrup
1 oz. Locally Preserved Basil Simple Syrup
2 oz. gin
3 oz. tonic water
2 slices peach, for garnish
2 fresh basil leaves, for garnish

To prepare ice cubes, pour tonic water into an empty ice cube tray. Place in freezer until frozen solid, at least 3 hours. To prepare cocktail, combine the syrups, gin, and tonic water in a cocktail shaker. Stir to blend and pour over prepared ice into a Collins glass. Garnish with sliced peaches and basil.
