Strawberry Balsamic Vinaigrette

Yield: 1 cup

2 tablespoons Locally Preserved Strawberry Pepper Jelly

3 tablespoons balsamic vinegar

1/3 cup minced shallots

1/2 cup extra-virgin olive oil

kosher salt, to taste

black pepper, to taste

In a medium bowl, whisk pepper jelly, vinegar, and shallots together.  Continue to whisk and slowly add olive oil until the vinaigrette emulsifies.  Season to taste with salt and pepper.
